Most of the country divides the year’s seasons by winter, spring, summer and all. In Geauga County we recognize a fifth season. Tucked between winter and spring is ‘Sugaring Season’. Its length varies and is totally depende3nt on Mother Nature, and it is definitely one of the sweetest seasons in which to visit.
Sap is a liquid sugar produced by trees to keep them from freezing in the winter. As temperatures get colder, the maple trees pull the sugar water further down their root system to keep them war. When temperatures rise during the day, the sap runs up the trunk and out to the branches. Sugaring is the process of collecting the sap and turning it into maple syrup, or maple sugar. This is done by bolign the sap until the water evaporates leaving nothing but pure Maple syrup.
